This is a great idea, this oh-so-simple meme started over at Tales from a Fairy Blogmother! It seems to be born out of the same frustration I often have with feeling like I have nothing to post, that misperception that something particularly special has to be going on for me to feel capable of writing about it. So, welcome to my first foray, and please check out her blog for others doing the same thing! (Hope she doesn't mind that Husbear doesn't really "do" recipes...)
I feel like I spend a lot of time on this blog talking about special meals, restaurant meals, or times that Husbear went all out to feed family and friends. This invariably has people asking us questions like "how do you eat like that all the time and stay so thin?" Well 1, we don't and 2, I'm not that thin (but thanks and kisses!).
So, look for this new feature every week! I'm going to aim for Thursday, but obviously I missed that goal with my very first post. This is proof that I'm fundamentally untrustworthy, and probably unstable.
This Wednesday, a drum roll pleeze for Husbear's creation:
Zucchini soup with pimento cheese toasts. Time from start to table: about 40 minutes.
A fairly simple meal that was definitely satisfying. The soup looked easy - just shredded zucchini cooked with onions in olive oil, pureed with chicken stock and a splash of cream. The zucchini was great, and I wanted to shove huge handfuls of raw shredded goodness in my face, so Husbear obliged with the garnish.
The pimento cheese was made a couple of weeks ago, approximately from this recipe, but he added a bit of harissa (we use Les Moulins Mahjoub, which is so good and flavorful and goes a long way) for heat. The bread, from Texas French Bread at the market, was grilled.
And that's it! I know those bowls look huge, but they're quite shallow. And I ate way too many pimento cheese toasts. Oops. (We shared the plate! That's not just my serving!)
