Not that this wasn't delicious. It was, in fact, TOTALLY delicious. But this was also a decidedly weird meal, made of a motley collection of leftovers.
When Husbear got home from work on Wednesday, he already knew what he'd be making. A list tacked to the fridge said "Spaghetti squash, mushroom and eggplant fryup, macaroni and cheese souffle, salad with flowers."
So that's what we had. The macaroni and cheese souffle, from this month's Gourmet (I just can not get freaking Epicurious to load, so no link right now), was leftover from Sunday's dinner. He sliced wedges of it and pan-fried it for our starch. The spaghetti squash was roasted and then spaghetti'd - that has to be a word, right?
The mushroom and eggplant saute... fryup... mixture... erm. He heated up a pan, put some olive oil in it, sliced some cute little market eggplant we had in the fridge, and threw them in to brown. Then, mushrooms. Fish sauce, since he puts it in EVERYTHING, swear to all that's holy. Little white wine, because deglazing with wine is always a good thing. Challenge me on when it's not, and I'll TAKE YOU ON.
And then he grabbed a couple of little containers of sauces leftover from gawd knows when. Really, there were two of them, and... well, one was leftover red-eye gravy. The other seemed to be some sort of tangy meat sauce with drippings and olive oil, but we thought for a while (and looked at pictures of our last few meals) and couldn't figure out what it was from.
And it turned out tasty, but strange. And I'm not a fan of spaghetti squash yet, even if I did get this from the great market guy with the cool butternut squash whose name I don't know yet.
Will next week be this off the wall?
